This Hemingway Daiquiri riff is very well thought through. Gin is used instead of rum and Aperol is used instead of maraschino liqueur. The bitter grapefruit juice goes along well with the gin and the Aperol. All that bitterness requires a small dose of simple syrup to keep the drink balanced though.⁠ ⁠ In the recipe it's instructed to garnish with a high five (which is particularly hard when you are home alone).⁠ ⁠ Wow this is a good cocktail! This drink gets such a nice ruby red colour from the cassis. And it tastes as good as it looks. They smokiness of the mezcal combines with the sweet liqueur in a really pleasant way. Those Underberg bitter bottles actually make a beautiful garnish, which this drink proves. Because after emptying the tiny bottle into the mix, the bottle is later used as a pretty striking decoration in the middle of the frozen drink.⁠ ⁠ And frozen drinks are a lot of fun on their own. It's just a weird in-between consistency that is sooo lovely to slurp on. We took another chance to use the Highclere Castle Gin [https://www.highclerecastlespirits.com/home.php] in a classic cocktail. This time we chose a Pegu Club, which is a spin on a a gin sour, with orange liqueur added.⁠ ⁠ Such a nice cocktail this is! It really lets the gin shine, at the same time evoking further interest wit hoses orange notes.
