The name of this cocktail is enough reason to make it. But apart from that it is also well worth doing because it's a really delicious drink. To us it has summer written all over it thanks to that rhubarb in it.⁠ ⁠ What we thought was extra exciting was how the rhubarb is combined with semi bitter Aperol. This Hemingway Daiquiri riff is very well thought through. Gin is used instead of rum and Aperol is used instead of maraschino liqueur. The bitter grapefruit juice goes along well with the gin and the Aperol. All that bitterness requires a small dose of simple syrup to keep the drink balanced though.⁠ ⁠ In the recipe it's instructed to garnish with a high five (which is particularly hard when you are home alone).⁠ ⁠ Wow this is a good cocktail!
