We figured this coffee infused rum liqueur would go well with a nutty partner, and then we saw the walnut liqueur in our cupboard… To then balance the sweetness a generous amount of fresh lemon juice was needed. And voila - a coffee, rum and nut sour was created. Why not call it the “Eye Nut”?⁠ ⁠ We think the combination worked really well. Coffee and nuts together is almost like a cookie, and the rum base further enhances the sweet features. However the lemon then really counters the sweetness

We simply love this drink! It has the perfect combination of sweet and bitter, plus its colour is really eye-catching. Using pineapple juice is fun because it creates this thick foam when shaken. With this strawberry daiquiri we bid our last farewell to the summer. It helps balancing the sweet notes of the cocktail, and it goes really well with strawberries.
