One of our favorite bars in Stockholm is bar Brahe at Hotel Reisen, located in Stockholm's Old Town. Their cocktail menu is always intriguing, and drinks are in most cases based on classics, but then have an interesting twist.

Together with Irish whiskey brand Tullamore D.E.W. - bar Brahe's bartenders Denise Sjöberg and Paul Broberg have created the Mole Model, a sort of Old Fashioned, laced with banana - and we're talking real banana! To mix this drink you need to start 24 hours in advance by making a banana syrup, but believe us it is definetely worth it!

Homemade banana syrup.

The banana syrup is made by chopping up one whole organic banana, including its peel. (Wash it well under water beforehand). Weigh the chopped pieces and then add the exact same weight of sugar. Keep everything in an airtight jar in room temperature for 24 hours, then fine strain the liquid created. You're left with an absolutely delicious banana syrup that will last a good few weeks in the fridge.

To make the actual cocktail, stir the below ingredients directly in a heavy rocks glass, over a large ice cube.

45 ml Tullamore D.E.W. 12 YO

7,5 ml banana syrup

2 drops of Mole bitters (a spicy chocolate bitter)
