Here we made a sour with Rubis Blanc [https://rubisblanc.com/en/homepage-en/], a French pure malt distillate. It's a clear product, making the sour look very transparent which we think is pretty sharp. ⁠ ⁠ Sour recipes are great because of their riffability. By changing the base spirit for something else, using lime instead of lemon and trying a flavoured syrup - you can end up with a completely different drink that should still be balanced and taste well as long as the above ratios are maintain

We thought this cocktail is fitting today, kust a few days before Christmas. It's a spicy mix of smoky mezcal, ginger and allspice. And although served chilled, there is definitely some heat in this one.⁠ ⁠ Happy Friday!⁠ ⁠ Recipe by Joann Spiegel⁠ Ingredients: 1,5 oz mezcal⁠ 0,75 oz Amontillado sherry⁠ 0,75 oz ginger syrup⁠ 0,5 oz lemon juice⁠ 0,5 oz allspice liqueur⁠ Mixing: Shake all ingredients with fresh ice and fine strain into rocks glass. A drink for the elegant-minded - made with top quality sweet vermouth, bourbon and several other good stuff in small quantities. The absinthe rinse leaves so much flavour despite being discarded, and Falernum is such an exotic and nice way to sweeten a drink. Then coffee and walnut liqueurs deepen those earthy notes, resulting in this much complex but easily enjoyable drink. We are always drawn to complex cocktails like this one. Luxury Cognac, an interesting vermouth and then a high quality absinthe. This is what makes cocktails so cool!⁠ ⁠ But despite the many potent ingredients, this cocktail is surprisingly harmonic.
